No more muffins at the coffee stop – here is Yvonnes’s recipe for healthy muesli bars

This is my (Yvonne’s) adaptation of a recipe for muesli bars provided by Daphne some time ago.


Ingredients

3 ½ cups rolled oats.

2 cups non fat milk powder.

1 egg.

Up to ¾ cup honey (depending on how sweet you want it).

¼ cup apple sauce – although the last batch I made had 4 passionfruit instead – otherwise I quickly zap an apple. (The apple adds a bit more moisture.)

½ cup water (if there is any juice with the apple, I use that instead).

Daphne’s recipe also had 1 tablespoon cocoa but I don’t include that.


The Method

Mix all together, adding whatever fruit, nuts and/or seeds you want – almonds, walnuts, cranberries, raisins, dried apricots, whatever takes your fancy (and you have available at the time.)

Spread into 9 x 12 tray (sorry, it’s in inches)  and cook for approximately 35 minutes at 350.

When cooked I cut it in to 14 or 16 bars, depending on how good my cutting is on the day. They are quite filling! Enjoy!
